Since the closure of her physical operations in Hong Kong, Peggy has pivoted her business model to provide consultancy and concept building services and is currently developing an online platform focused on sustainable operations training for food service professionals in order to help the industry rethink our operational decisions from sourcing, menu development, nutrition, to waste management; and how those decisions affect the planet and its ecosystems.
